My dad is Finnish and very proud of it! He grew up in a family with fairly strong heritage and with that came family recipes and traditions. One of my favorites, from when I was a little girl, was Pannukakku. Today it is one of our son's favorites as well. What is Pannukakku? Simply put, it is a Finnish pancake that is tender and puffy! It is also an impossibly easy dish to make, so if you are looking for something simple for breakfast or an impromptu guest visit, this fits in perfectly. Pannukakku has also become part of our family Christmas morning tradition and I hope it is one that my children continue through the years. This heavenly dish can be topped with your favorite preserves, fresh fruit, butter and syrup, or even dusted with powdered sugar!
Ingredients:
1 qt. milk (I have used skim, but like the consistency better with 2%)
4 eggs
1 1/2 cups flour
1/2 cup sugar
1 tsp. sale
1/2 cup butter(melted)
Garnishes: We top it with butter and syrup, but it is also good with preserves, fresh fruit, and powdered sugar.
Instructions:
Preheat oven to 350 degrees. Melt butter and then pour into a 9" x 13" pan(I use a glass pan). Be sure that the butter is "moved" around to cover the bottom of the pan. Mix all of the Pannukakku ingredients in a large bowl with a wire whisk until combined. It may be a slight bit lumpy and that is OK. Pour mixture over the butter in the pan. Put in oven and bake at 350 degrees for 1 hour. Once done baking, allow it to set for about 5-10 minutes before cutting. Serve warm.
